Chipotle Chicken of the Woods

Mmm yes, a Mexican-inspired meal with a medicinal wild mushroom!


 

Here's What You'll Need:

  • Chicken of the Woods (As much as you can forage!)

  • 1 Yellow Onion

  • 1 Red Pepper

  • Chipotle Cream Sauce ( I used Herdez Chipotle Salsa Cremosa, and added ranch for zest, but you can make your own!)

  • 1 Can Refried Beans

  • 1 Packet Authentic Spanish Yellow Rice

  • Cayenne Pepper

  • Ground Cumin

  • Salt

  • Butter


Step-By-Step:

  1. Start your rice to have it cooking throughout prep (takes ~25 min)

  2. Clean your Chicken of the Woods with a damp cloth and cut off any tough chunks closer to the stipe

  3. Slice your chicken of the woods into thin strips

  4. Sauté your COW strips in a medium pan (cast iron preferred) with butter and salt

  5. Put refried beans in a pot and heat on medium/low, stirring occasionally

  6. After thoroughly cooking your COW (at least 10 mins on medium heat, stirring occasionally) add diced onion

  7. After a couple minutes of stirring, slice and add in your red pepper

  8. Season the mushrooms, peppers and onions with cayenne and cumin

  9. Finally, mix in your Chipotle Sauce and heat all together

  10. Serve with rice & beans!
