‘Chicken of the Woods’ Ramen Dish for Two
What you’ll need:
Ramen Noodles - Maruchan Brand (Chicken Flavor)
Butter
Garlic
Cilantro
Green Onions
‘Chicken of the Woods’ Mushroom - We used Laetiporus Cincinnatus but feel free to use Laetiporus sulphureus or another edible mushrooms substitute
2 Eggs
Peanuts
Teriyaki Sauce
Sriracha
Salt & Pepper
Step by Step:
Clean & slice your COTW mushrooms - you’ll want about 2 cups of sliced mushrooms, but any amount that you forage will work based on personal preference
Heat butter & 2 cloves of minced garlic in a pan on medium heat
Add sliced mushrooms to pan & sauté for at least 10 mins on medium to medium high heat
As the mushrooms cook in the garlic and butter, add a splash of teriyaki sauce, salt, pepper, and sliced green onions
Boil water in a separate pot for ramen noodles, once water boils add noodles & stir until cooked
In a separate pan fry 2 eggs over easy
Crush up about 1/2 cup of peanuts
Once everything is cooked start to build your ramen bowl: Ramen noodle base *add a couple shakes of the chicken seasoning that comes with the Maruchan packet onto the cooked noodles*
Next add the sautéed mushrooms followed by the fried egg topped with cilantro, chopped green onions, crushed peanuts and a sriracha sauce drizzle.
